mushroom soup



  • 1 white onion, small diced
  • 1 garlic clove, minced
  • 1 TB grapeseed oil
  • 1 cup of fresh mushroom (e.g. portabella mushroom, shitake, oyster, etc.), cleaned and sliced
  • 1 cup of dried mushroom (e.g. shitake, porcini, and/or oyster)
  • 1 spring of thyme
  • 1/4 cup unflavored almond milk
  • 1/2 cup of cooked chickpeas
  • 1 ts vegetable bouillon
  • optionally: more water, depending on wanted consistency
  • salt, pepper to taste
For garnish: more fresh mushroom sauteed in olive oil, salt and pepper and some feta crumbles.
Reconstitute the dried mushrooms in 2 cups of boiling water for about 10min. Heat a pot with the grapeseed oil and fry the onion and garlic until translucent, then add the fresh mushrooms. Saute the mushroom until they are slightly browned. Now, add the dried mushroom with the soaking liquid. Stir and combine well. Bring to a boil, and then turn down the heat to a medium-low simmer. Add the thyme, bouillon, almond  milk and the chickpeas. Simmer on medium-low for ca. 30min. Let it cool, and then puree in a really good blender (e.g. vitamix) to get a creamy, smooth consistency. Reheat, add salt and pepper to taste, and serve with sauteed fresh baby bella mushroom and feta crumbles (optional).

Two Ingredient Lemon Bars.... fast and easy!



Two Ingredient Lemon Bars......
2 Ingredient Lemon Bars
Oh yeah you read that right only Two simple ingredients to make these melt in your mouth ( middle of the pie) lemon squares!
Yep this is like you cut your self a slice right out of the middle of the pie!
 

This is all you need:
1 box angel food cake mix( I use Betty Crocker)
2 cans lemon pie filling
I used two 21 oz cans of Comstock pie filling ( total of 42 oz)
Mix dry cake mix and cans of pie filling together in large bowl.
I just mixed it by hand...
Pour into greased 9 x 13″ baking pan.
Bake at 350 degrees for 25 minutes or until top is starting to brown.
 

 Cool on wire rack and sprinkle with powered sugar. It has a melt in your mouth spongy texture.
I have come across this recipe in a few different places so thanks to those who shared this yummy recipe!

I'm pretty sure I know the Witch that is doing it, maybe because her blog is full of crap she tries to tell everyone is her's, and it isn't. 

And no, she's not on my follower list, if she was she would be gone.

But, see, It's OK, I just remove the "offending post" I'm easy like that.  But I have to tell you that THAT BITCH, needs to tend to her own shit, and leave mine alone...... it's not good to fuck with a witch!
