Perfect Winter pick me up!



Sweet Potato-Sausage Soup
1 tablespoon olive oil
1 large yellow onion, diced large
2 cloves garlic, minced
Salt and pepper
3/4 pound sweet Italian sausage, casings removed
2 sweet potatoes (1 pound total), peeled and diced medium
4 cups chicken broth (I'm allergic to chicken, so I used vegetable broth)
3/4 cup small pasta shells
4 cups roughly chopped mixed greens, such as kale and Swiss chard
Grated Parmesan, for serving

The only thing you do before hand is fry the sausage in the Olive Oil, while in the casings, then cool remove casings and add to the soup. 

The rest is then added to the broth and cook and simmered till it's just right

The sweet potatoes are a must for women... they boost or estrogen, calm our nerves, and have loads of vitamins that women need!

Garlic and onions helps the immune system fight off colds and other winter woes

Kale and Swiss Chard are loaded with antitoxins and vitamins. I'm not normally a Kale lover, but in the soup it's super.... think Progresso Soups!

A friend suggested that you can substitute Tofu for the sausage... make sure you marinate it in Italian herbs before hand to get the proper taste
